Winning chef enchanted by Icelandic products

Italian chef Nicola Fanetti won the best chef award at this year's Food and Fun festival in Reykjavik. Fanetti was guest chef at Italian eatery Essensia on Hverfisgata. 

Chef and owner of Essensia says that Fanetti's cooking matched the ideology of Essensia very well. On the winning menu was baccalao ravioli and carpaccio of Arctic Char. 

Fanetti was delighted with the Icelandic ingredients he used, including herbs from specialised company Íslensk Hollusta which is selling arctic thyme, seaweed and much more to famous restaurants around the globe.
