Recipe: Golden redfish with chilli
A rare fish is now available from the Bónus supermarket chain in Iceland - golden redfish from fish company Norðanfiskur. Golden redfish is not a common food in Iceland.
Norðanfiskur just put three different products on the market: "skinpack" sealed fresh salmon, golden redfish and cod. Skinpack means that they're vacuum sealed and can hold their freshness longer.
Golden redfish is particularly rich in vitamin D and Omega fatty acids.
The recipe below is by Icelandic chef Leifur Kolbeinsson who owns Kolabrautin in Harpa concert hall.

Recipe for four people
15-20 minutes
Ingredients:
- 800 g Golden redfish
- 60 ml butter
- 60 ml olive oil
- 6 garlic cloves, chopped finely
- Juice of 1/2 lemon
- 1 teaspoon smoked paprika
- ½ teaspoon chili-flakes
- Salt and pepper

1handful of chopped parsley
Method: - Melt the butter on a pan and pour in the olive oil. Put the garlic, chillli and spices into the pan along with the lemon juice. Heat at a gentle temperature until the garlic is cooked. Pour the mixture over the fish and bake in a preheated oven at 220 C for 6 minutes. Garnish with fresh chopped parsley upon serving.
