Weekend recipe: Haddock in Mango curry

Haddock is the cheapest and most common fish on the plates of Icelanders. It's a very versatile fish which makes it easy to experiment with different flavours. Here's an Indian influenced recipe from Smartland, the mbl.is style section for the whole family. 

Ingredients: 


500 g haddock 

1 tablespoon olive oil

2 carrots, diced

2 red peppers, diced

2 tablespoons spring onion, chopped

1/2  litre cream

1 1/2 tablespoons mango chutney

1 tablespoon coriander, finely chopped

1- 2 teaspoons curry powder

Grated cheese, salt and pepper. 

Method: Chop the vegetables and put them in a saucepan with the olive oil. Simmer for a short while. Add the cream and the fresh herbs and simmer at low heat. Add the mango chutney and curry powder, stir, add salt and pepper to taste. If you want the sauce stronger in flavour you can add more curry. 

Rinse the fish and put into an oven dish. Pour the sauce over it and then add grated cheese on top. 

Cook in the oven at 190°C í for 30-35 minutes. Serve with rice and salad.
