The idea of using insects in health foods came to Búi Bjarmar Aðalsteinsson when reading that farmland in Europe would be dissipated and that new sources of protein had to be found in the future. He developed the Jungle bar which contain nuts, seeds, dried fruit and cricket flour, now available on Kickstarter.
Cricket flour contains vitamins, minerals and protein and is, according to Aðalsteinsson, devoid of any feelers, legs or wings, only healthy, nutritious flour. He says that insect bars are available in the US but that their insect bars are the first to be developed in Europe.
The cricket bars made British newspaper The Daily Mail last week and the whole article can be seen HERE.
