Icelanders Davíð Stefánsson and Fannar Björgvinsson recently opened Nicecream, vegan icecream sold on bikes in Copenhagen. "The ice cream is made with coconut milk using fresh fruit and organic produce. Everything is hand-made and we don't use any machines," explains Stefánsson. 

Björgvinsson is vegan and he's a professional vegan chef while Stefánsson is not. "The idea was to put love into the ice cream as it's all hand-made and we know exactly what goes into it," Stefánsson explains. The ice cream, once made, will be transported on small freezers on bikes and sale will begin mid-April. 

Nicecream will offer six flavours to begin with and it took the pair six months to develop the flavours. "It tastes great and you can eat it with a clear conscience. And lactose intolerant people can also eat our ice cream. The ice cream is sold on a stick and price is kept to a minimum, 29 Danish Crowns which is about 570 ISK. "We're trying to break away from organic healthy food being really expensive," they explain. Several vegan companies have shown interest in the ice cream. "We have reason to believe that this might become popular. There are so many mass produced foods and we think people like to eat quality, organic products."
