A new ice cream parlour will be opening soon in Laugarás 1 near the Laugardalur swimming pool in Reykjavik.  The owner is Karl Viggó Vigfússon, one of the founders of the hugely popular Omnom chocolate, and he is joined by chocolatier Hjalti Lýðsson and businessman Jóhann Friðrik Haraldsson, founder of Bryggjan Brugghús and owner of Laundromat café. 

The ice cream parlour will be called Skúbb, which means scoop and will offer organic ice cream made in Italian fashion. "I always wanted to make ice cream like the one I get in Italy," says Vigfússon. "That's how this adventure started.  And to make ice cream from scratch using organic ingredients. For example, we only use organic milk frm Bíó Bú. 

"If we offer strawberry ice cream then it will be made from strawberries. The ingredients is what's most important. We also use biodegradable containers for our ice creams and paper straws for the milkshakes. 

The new ice cream parlour will open in ten days time.
