Recipe: Healthy lamb broth to kill those autumn colds

This is the season for fresh lamb which is plentiful in Icelandic supermarkets right now. Here's a recipe from Smartland's Marta María Jónasdóttir on how to make a healthy version of the traditional Icelandic "kjötsúpa" or lamb broth.

1 ½ litres of water 

3 organic stock cubes

1 tablespoon curry powder

1 teaspoon dried chilli flakes

4 lime leaves

2 sprigs of lemongrass 

300 grammes of lamb, preferably small cuts known as "lambagúllas" in Iceland, but you could also use leftover roast lamb.

1 bunch of spring onions

6 cloves of garlic

4 cm grated fresh ginger

Salt and pepper to taste
