A rare fish is now available from the Bónus supermarket chain in Iceland - golden redfish from fish company Norðanfiskur. Golden redfish is not a common food in Iceland.

Norðanfiskur just put three different products on the market: "skinpack" sealed fresh salmon, golden redfish and cod. Skinpack means that they're vacuum sealed and can hold their freshness longer.

Golden redfish is particularly rich in vitamin D and Omega fatty acids.

Recipe for four people
15-20 minutes

Ingredients:

  • 800 g Golden redfish
  • 60 ml butter
  • 60 ml olive oil
  • 6 garlic cloves, chopped finely
  • Juice of 1/2 lemon
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili-flakes
  • Salt and pepper
  • 1handful of chopped parsley

    Method:
  • Melt the butter on a pan and pour in the olive oil. Put the garlic, chillli and spices into the pan along with the lemon juice. Heat at a gentle temperature until the garlic is cooked.  Pour the mixture over the fish and bake in a preheated oven at 220 C for 6 minutes. Garnish with fresh chopped parsley upon serving.
